French-inspired dessert crêpes have a doughy consistency and subtly sweet, eggy flavor that makes them a light end to a meal or a perfect part of breakfast or brunch. Don’t forget to fill them with fruit or top them with whipped cream!

Makes 18 crepes.

  1. Mix all-purpose flour and Stevita in a medium mixing bowl until well combined. Beat in milk, eggs, flavorless oil, and salt until well mixed.
  2. Lightly grease a 6-inch skillet with oil or butter and bring up to temperature over medium heat. Remove from heat and spoon 2 tablespoons of batter into the hot pan.
  3. Lift and tilt the skillet to cover the bottom and form a thin circle. Return to heat, browning on one side only, before removing the crêpe and placing it on paper towels.
  4. Repeat steps 2 and 3 with remaining batter, greasing the skillet as necessary.
