An all-American favorite, blueberries are a taste of summer in one bite. Keep that vacation feeling going by making this sugar-free blueberry syrup for smothering pancakes, waffles, or French toast. Don’t forget the lemon juice to give it a little zing!

  1. Combine blueberries and apple juice in a blender or food processor. Blend until pureed.
  2. Add blueberry puree, Stevita, and cornstarch to a heavy saucepan and mix well. Cook over medium heat, stirring constantly, until thick and bubbly.
  3. Continue cooking and stirring for 2 more minutes, then remove from heat. Stir in lemon juice and butter until combined.
