If you’re going to go through the effort of making homemade sugar-free cookies and cakes, you might as well make your own homemade sugar-free Chocolate Chips! These Chocolate Chips are a perfect last-minute addition to your favorite sweet baked goods. Modify the recipe steps to create the perfect protective coating for special sugar-free truffles and candies!

Makes ¾ cup.

  1. Combine milk powder, chopped baking chocolate, paraffin wax, and Stevita in a food processor or blender. Blend until powdery.
  2. Simmer water in the bottom of a double boiler, then combine milk and the chocolate powder in the top bowl. Cook until chocolate and paraffin wax melt, stirring constantly; look for a smooth, thick mixture.
  3. Remove the melted chocolate mixture from the heat and allow to cool slightly. Spread chocolate mixture on wax paper.
  4. Let the chocolate set overnight before removing the chocolate from the wax paper and breaking it into small pieces. Store in the refrigerator.
  5. Note: if chocolate does not remove easily, warm the back of the waxed paper with your hands.

Variation

Dipping Chocolate

Follow directions above but do not cool when mixture is melted.  Keeping chocolate slightly warm, dip candies using a dipping spoon.  Shake off excess chocolate, place coated candies on waxed paper, and allow to cool completely.  Store in the refrigerator.
