An adaptable recipe that can be combined with nut butters, fruits, and fillings of choice, this comfort food loaf pairs well with a tall glass of almond milk and a variety of spreads.

Makes 1 loaf, about 12 slices.

  1. Preheat oven to 350°F. Combine mashed bananas, almond or nut butter, unsalted butter, and eggs in a mixing bowl. Beat well with an electric mixer, scraping down the bowl with a spatula to fully combine.
  2. Add in coconut or nut flour, ground cinnamon, baking soda, baking powder, Stevita, and sea salt. Mix well.
  3. Pour batter into a silicone pan or well-greased loaf pan and spread evenly. Bake for 55 to 60 minutes or until a toothpick inserted into the center comes out clean.
  4. Remove loaf from oven and invert bread onto a cooling rack. Slice and serve.

Variations

Cranberry Orange

Use only 3 tablespoons of unsalted butter. Add the zest of one whole orange, juice of one whole orange, and 1 cup dried or fresh cranberries.

Chocolate Blueberry

Add 1 cup of fresh blueberries and ½ cup of cocoa powder.

Pumpkin Pecan

Reduce the almond butter to ¼ cup and add ½ cup of pumpkin purée and 1 cup chopped pecan pieces.

Muffins or Mini Muffins

For normal-size muffins, bake for 30 to 35 minutes. For mini muffins, bake around 25 minutes.
