Buttery Shortbread Cookies
- FLOUR - 1 1/4 CUPS
- STEVITA ORGANIC SPOONABLE STEVIA - 2 1/2 TEASPOONS
OR SIMPLY-STEVIA PURE STEVIA - 3/16 TSP.
OR STEVITA ORGANIC SPOONABLE STEVIA - 5 PACKETS
- SALT - 1/4 TEASPOON
- BUTTER - 1/2 CUP
In a mixing bowl, combine flour, salt, and stevia. Cut in butter till mixture resembles fine crumbs and starts to cling. Form the mixture into a ball; knead till smooth. On an ungreased cookie sheet, pat or roll the dough into an 8-inch circle. Using your fingers, press to make a scalloped edge. With a knife, cut circle into 16 pie-shaped wedges, leaving wedges in the circle shape. Bake in a 325°F oven for 25-30 minutes or till bottom just starts to brown and center is set. While warm, cut circle into wedges again. Cool on the cookie sheet for 5 minutes. Remove from cookie sheet; cool on a wire rack.
Makes 16 wedges.
