Think of Freezer-friendly Peach Butter as a summery version of Sugar-free Apple Butter (see index). If you have an overabundance of peaches, this is a great way to preserve them for later consumption during colder months. A little peach butter on toast will send you right back to warm weather heaven in the dead of winter.

Makes 6 cups, or 24 2-tablespoon servings.

  1. Combine peaches, white grape juice, ground cinnamon, ground nutmeg, ground cloves, and Stevita in a large, heavy saucepan.
  2. Bring to a boil, stirring occasionally. Cover and simmer until fruit can be mashed with a fork, about 15 minutes.
  3. Cool peach mixture slightly, then puree in a blender or food processor. Return to saucepan.
  4. Simmer over low heat, uncovered, until desired consistency; this may take up to 1 hour. Stir frequently.

Remove from heat and transfer to freezer containers or jars, leaving ½-inch head space. Place in the refrigerator until cool, about 3 hours, then transfer to freezer. Store up to 2 weeks in refrigerator or 3 months in freezer.
