It’s called Freezer-friendly Fruit Juice, Jelly, but it’s fine for the refrigerator too. Like our Sugar-free Freezer Fruit Jam (see index), it’s a fast and easy way for anyone to dip their toes into the world of food preservation and jamming. What makes it even easier than a jam? No need for fresh, prepared fruit! Just pick your favorite juice and start cooking.

Makes 4 cups, or 32 2-tablespoon servings

  1. Combine juice and pectin in a heavy saucepan. Let mixture sit 5 to 10 minutes.
  2. Bring to a full boil over high heat, stirring constantly; boil for 2 minutes longer, continuing to stir. Remove from heat and stir in Stevita to taste until well combined.
  3. Pour jelly into clean freezer containers, leaving a 1/2-inch head space, and cover with a tight-fitting lid. Refrigerate until set, about 3 hours, then transfer to freezer.
