A cookie-like crust that’s great for frozen or refrigerated fillings, such as pudding, light chiffon, and ice cream pies.

Makes one 9-inch, single-crust pastry.

  1. n a medium bowl, beat butter, cream cheese, and Stevita with an electric mixer on high speed until creamy.
  2. Add 1 cup of the flour, the egg, baking powder, and vanilla extract. Mix to combine, then add remaining flour and mix until well blended. Cover and chill 1 hour.
  3. Preheat oven to 375°F. Roll chilled dough into a circle on wax paper. Invert over pie pan, peeling off wax paper and filling pan with dough. Shape edge as desired.
  4. Bake for 12 minutes or until golden. Cool before filling.

Variations 

Chocolate Cookie Crust

Increase Stevita Organic Blend to 2 1/2 tablespoons. Add 2 ounces of unsweetened chocolate, melted and slightly cooled, with the butter and cream cheese mixture. Continue preparing as directed.

Orange Cookie Crust

Prepare as directed, adding 1/2 teaspoon orange zest and 1 tablespoon frozen orange juice concentrate with the vanilla extract.
