- For the filling, combine Stevita, cornstarch, and 1 cup of reserved canned peach liquid in a heavy saucepan. Stir until cornstarch dissolves.
- Add drained peaches, then bring to a simmer and cook until thick, stirring all the while. Set aside.
- For the topping, preheat the oven to 400°F. Mix flour, Stevita, baking powder, and cinnamon in a medium bowl. Cut cold butter into flour mixture until coarse crumbs form.
- In a small bowl, whisk together buttermilk and egg. Add to the flour and butter mixture until just moistened.
- Transfer warm peach filling to an 8” x 8” x 2” baking dish and drop topping in 6 mounds over the filling.
- Bake for 20 to 25 minutes or until a toothpick comes out clean when inserted into topping. Serve warm.
