- Combine the apricots, water Stevita, and juice of 1 lemon in a heavy saucepan. Cook over medium heat, stirring frequently, until apricots soften.
- Bring mixture to a boil, then remove from heat. Stir in rum extract and allow to cool.
- Puree sauce in a blender or food processor until thick and creamy. Refrigerate and serve cold.
