Vanilla Cream Pie
- STEVITA ORGANIC SPOONABLE STEVIA - 9 TEASPOONS
OR SIMPLY-STEVIA PURE STEVIA - 1 1/8 TSP.
OR STEVITA ORGANIC SPOONABLE STEVIA - 18 PACKETS
- CORNSTARCH - 1/4 CUP
- BUTTER - 2 TABLESPOONS
- MILK - 3 CUPS
- EGG YOLKS - 4, BEATEN
- VANILLA - 2 TEASPOONS
- BAKED SINGLE-CRUST PASTRY - (SEE INDEX)
- MERINGUE FOR PIE OR WHIPPED CREAM - (SEE INDEX)
Combine stevia, cornstarch, and milk in a saucepan. Stirring constantly, cook over medium heat till mixture is thick and bubbly. Reduce heat, add J tablespoon butter, and continue cooking and stirring for 3
more minutes. Stir 1 cup of hot mixture into beaten egg yolks. Stirring constantly, add all of egg mixture to the hot mixture in the saucepan. Still stirring constantly, cook over medium heat till near boiling. Continue cooking and stirring for 3 more minutes. Remove from heat. Stir in butter and vanilla. Pour the hot filling into baked crust.
Makes 8 servings.
NUTRITIONAL INFORMATION PER SERVING:
Banana Cream Pie: Prepare as above, but slice 2 medium bananas into the bottom of the baked crust. Pour filling over bananas.
Whipped Cream Topping: Prepare as above, chill hot pie, and then spread whipped cream over filling.
Meringue Topping: Prepare as above, but spread meringue over hot filling, sealing edges. Bake at 350°F for 15 minutes or till golden. Cool.
