Lite Whipped Topping
- EVAPORATED MILK - 12 OUNCES
- WATER - 1/3 CUP
- GELATIN - 1 PACKAGE
- STEVITA ORGANIC SPOONABLE STEVIA - 2 TEASPOONS
OR STEVIOSIDE - 1/4 TSP.
OR STEVITA ORGANIC SPOONABLE STEVIA - 4 PACKETS
- VANILLA - 1 TEASPOON
Refrigerate can of condensed milk till well chilled, at least 4 hours. In a small saucepan, mix cold water and gelatin; allow to sit for five minutes. Over medium heat, cook gelatin mixture till bubbly. Allow cooling to room temperature. Make an ice bath: take a large bowl and fill with ice, placing a smaller bowl on top of the ice. Pour the condensed milk, gelatin mixture, stevia, and vanilla in a smaller bowl. On high speed of an electric mixer, beat milk mixture till soft peaks form. Best when served immediately. Refrigerate any unused portions for up to 5 days.
Makes about 4 cups (sixteen 1/4-cup servings).
