Light & Fluffy Tapioca
- WHITE - 1 EGG
- NONFAT DRY MILK POWDER - 1 TABLESPOON
- STEVITA ORGANIC SPOONABLE STEVIA - 3 TEASPOONS
OR SIMPLY-STEVIA PURE STEVIA - 3/8 TSP.
OR STEVITA ORGANIC SPOONABLE STEVIA - 6 PACKETS
- MINUTE TAPIOCA - 3 TABLESPOONS
- MILK - 2 CUPS
- EGG YOLK - 1
- VANILLA - 1 1/2 TEASPOONS
In a small bowl, mix 1 teaspoon Stevita Organic Spoonable Stevia with 1 tablespoon of dry powdered milk; set aside. In another bowl, using an electric mixer on high speed, beat egg white until foamy. Gradually add powdered milk mixture to egg whites, beating until soft peaks form. Mix tapioca with remaining stevia blend, milk, and egg yolk in a medium saucepan. Let stand 5 minutes. Stirring constantly, cook on medium heat until mixture comes to a full boil. Remove from heat. Stir tapioca mixture into egg-white mixture until well blended. Stir in vanilla. Dispense into small dessert bowls. Cool.
Makes approximately 6 servings.
