In a heavy saucepan, combine juice and one package of lite fruit pectin. Let mixture set 5-10 minutes, then bring to a full boil over high heat, stirring constantly. Boil for 2 minutes longer, still stirring constantly. Remove from heat and add stevia to taste. Stir well. Pour into clean freezer containers, leaving a 1/2-inch headspace; cover with tight-fitting lid, and refrigerate. After jam has set (about 3 hours), transfer to freezer.
Makes 4 cups (thirty-two 2-tablespoon servings).
