  1. Sprinkle gelatin over ¼ cup cold water in a small saucepan and let stand 5 minutes. Stir gelatin and water over low heat until gelatin is dissolved, then allow mixture to cool to room temperature.
  2. Combine evaporated milk, Stevita to taste, vanilla extract, and cooled gelatin in a large bowl. Beat mixture with an electric mixer until soft peaks form. When you lift the mixer, you should see peaks that flop over slightly.
  3. Fold in crushed or diced fruit, if using, then spoon mixture into freezer molds or 3-ounce paper cups. If using paper cups, cover them with foil and insert wooden sticks through foil into mixture.
  4. Freeze until firm.
