A fluffy dessert for when you want something easy to make and easy to dress up. Adding rum, Kahlua, or instant coffee complements the chocolate, while longer chill times result in a denser texture.

Makes 4 servings.

  1. Add 1 tablespoon of cold water to a small bowl, then sprinkle gelatin over it. After blooming gelatin for 5 minutes, add 1 tablespoon of boiling water and stir until gelatin is completely dissolved and mixture is clear. Set aside to cool slightly.
  2. Stir together Stevita and cocoa powder in a medium bowl. Add whipping cream and vanilla extract, then whip at medium speed using a hand mixer until stiff peaks form. Scrape the bottom of the bowl occasionally to make sure everything is incorporated.
  3. Pour in gelatin mixture and whip until well blended. Spoon into serving dishes, then chill in the refrigerator for at least 30 minutes.
