- BUTTER - 1/2 CUP
- WATER - 1 CUP
- SALT - 1/8 TEASPOON
- ALL-PURPOSE FLOUR - 1 CUP
- STEVITA ORGANIC SPOONABLE STEVIA - 1 TEASPOON
OR SIMPLY-STEVIA PURE STEVIA - 1/8 TSP.
OR STEVITA ORGANIC SPOONABLE STEVIA - 2 PACKETS
- EGGS - 4
- POWDERED SUGAR REPLACEMENT - OPTIONAL (SEE INDEX)
In a small bowl, combine flour and stevia, mix well, and set aside. In a heavy saucepan, combine butter, 1 cup water, and salt. Bring to a boil. While stirring vigorously, add flour mixture to boiling water all at once. Cook, stirring constantly, till mixture forms a ball. Remove from heat; cool slightly. Beating with a wooden spoon, add eggs one at a time. Beat till dough is smooth. On a greased baking sheet, drop heaping tablespoons of batter 3 inches apart. Bake in a 400°F oven for 30 to 35 minutes or till golden. Cool. Cut puffs in half, and remove any excess dough from inside. Fill with your favorite filling, like pudding, whipped cream, ice cream, or fresh fruit. Or just sift a little cocoa powder on top and enjoy.
