Chocolate Cream Pie
- STEVITA ORGANIC SPOONABLE STEVIA - 11 TEASPOONS
OR SIMPLY-STEVIA PURE STEVIA - 1 1/2 TSP.
OR STEVITA ORGANIC SPOONABLE STEVIA - 22 PACKETS
- CORNSTARCH - 1/4 CUP
- UNSWEETENED CHOCOLATE - 3 OUNCES, CHOPPED
- MILK - 3 CUPS
- EGG YOLKS - 4, BEATEN
- VANILLA - 2 TEASPOONS
- BAKED SINGLE-CRUST PASTRY - (SEE INDEX)
- MERINGUE OR WHIPPED CREAM - (SEE INDEX)
Combine stevia, cornstarch, and milk in a saucepan; add chopped chocolate. Stirring constantly, cook over medium heat till mixture is thick and bubbly. Reduce heat. Add 1 tablespoon butter; continue cooking and stirring for 3 more minutes. Stir 1 cup of hot mixture into beaten egg yolks. Stirring constantly, add all of egg mixture to the hot mixture in the saucepan. Cook over medium heat, still stirring constantly, till near boiling. Continue cooking and stirring for 3 more minutes. Remove from heat. Stir in butter and vanilla. Pour the hot filling into baked crust.
