- INSTANT COFFEE CRYSTALS - 1 TABLESPOON go here
- COCOA POWDER - 2 TABLESPOONS
- CORNSTARCH - 1 TABLESPOON
- SALT - 1/4 TEASPOON
- MILK - 3 CUPS
- EGGS - 2, BEATEN
- HALF-AND-HALF - 2/3 CUP
- WHIPPING CREAM - 1 CUP
- VANILLA EXTRACT - 1 TEASPOON
In a small bowl, gently beat eggs; set aside. In a saucepan, combine stevia, instant coffee crystals, cocoa, cornstarch, and salt. Gradually stir in milk. Stirring constantly, cook over medium heat until mixture begins to simmer. Gradually stir 1 cup of the hot milk mixture into the beaten eggs. Gradually stir all of the egg mixture into the remaining hot milk mixture in the saucepan. Continue cooking and stirring over low heat until slightly thickened; then cook 2 more minutes. Stir in half-and-half, whipping cream, and vanilla. Cover and refrigerate until cold. Freeze according to directions of ice-cream machine manufacturer. just click for source
